Jarrah honey is one of the rarest honeys you can buy. It comes from a single tree, the Eucalyptus marginata, which grows in pockets of the southwest corner of Western Australia and only flowers properly every two years. Ours carries a TA35+ rating, which puts it alongside plenty of Manuka grades.

Flavour and Texture

Medium to dark amber in the jar, thick on the spoon, with that signature caramel finish that lingers a little longer than you expect. One of the quirks of Jarrah honey is that it doesn’t crystallise like other varieties do. Its glucose is low and its fructose is high, so it stays liquid and pourable in the pantry.

What the TA Rating Means

Jarrah honey has earned itself the nickname “king of all honeys”. TA stands for Total Activity, and it’s the measure used for the honey’s natural hydrogen peroxide activity. Ours sits at TA35+. What sets Jarrah apart from Manuka is the source of that activity. Manuka relies on methylglyoxal (MGO), which can degrade over time, while Jarrah’s hydrogen peroxide activity tends to stay more stable.

A teaspoon a day is the usual serving. If you’re taking it for a specific health reason, have a chat with your GP first.

How to Use It

Drizzle it over yoghurt, porridge, or fresh fruit, stir it into warm water with lemon for a morning ritual, or spread it on sourdough with a smear of butter. Pair it with sharp cheese and walnuts on a board.

What does TA35+ mean for Jarrah honey?

TA stands for Total Activity, which is the measure used for a honey’s natural activity level. The plus sign means the honey tested at 35 or higher. The number reflects the honey’s natural hydrogen peroxide activity.
Both are bioactive, but they get their character from different compounds. Manuka relies on methylglyoxal (MGO), and Jarrah relies on hydrogen peroxide. For children over twelve months, yes, in normal amounts. Like any raw honey, please don’t give honey to babies under twelve months.

This is one of its standout features. Jarrah has a low glucose and high fructose ratio, which means it stays liquid for much longer than most other honeys. It won’t go grainy in your pantry the way clover or wildflower honey often will.

Keep it in a cool dry pantry with the lid on tight. Don’t refrigerate it. Raw honey lasts indefinitely when stored properly, so a jar opened today will still be lovely a year from now.

What makes our honey unique

Our beehives are located in real WA bushland. We manage every hive and pull every frame by hand. Harvesting with minimal processing, letting the honey settle on its own, and never straining through a micro-filter. Then we pour it raw. Nothing added, nothing taken away. Just the season, the bush, and the bees doing what they do.

Your honey questions, answered

Why has my honey crystallised?

Totally normal, and actually a good sign. Real, raw honey crystallises over time because of its natural sugar content, it just means there’s nothing added and nothing taken away. If you want it back to liquid, sit the jar in a bowl of warm (not boiling) water for a few minutes and give it a stir. It’ll taste exactly the same.

In our books, yes. Most honey you see in supermarkets has been heated and filtered, which is great for shelf life but strips out a lot of the natural pollen, enzymes and flavour along the way. Ours is raw, meaning it’s harvested straight from the hive and never heated past what the bees themselves would experience. You get all the natural goodness, plus that proper honey taste.

Straight from our own hives across Western Australia. We’re migratory beekeepers, moving our hives through Perth and the South West so our bees can forage from native trees like Jarrah and Marri, then we harvest and bottle it ourselves.
