Chicken Nourish Bowl with Honey Mustard Dressing
I’m at my computer working on the business and, like most mums, my mind is moving through the day and the mental load of “what’s for dinner”. On my meal plan tonight is my Chicken Nourish Bowls with Honey Mustard Dressing – featuring my favourite honey, of course!
Lately, Casey has been spending a lot of time driving down south to check on our hives. It’s the peak of the season, and our bees are working just as hard as we are, buzzing through the bush which has been awash with wildflowers. Checking the hives isn’t just a quick trip—it often means driving hundreds of kilometres in a single day, from our home north of Perth to the stunning south of Western Australia. He’s out there making sure the bees are thriving, collecting honey, and ensuring everything is ready for the next harvest.

For me, a good meal at the end of a busy day—whether Casey is back from hive checks or I’m wrapping up my own whirlwind of tasks—is one of life’s simple joys. This dish has become a go-to for our family, and I hope it becomes a favourite in yours too!

Ingredients for Dressing
- 2 flat tbsp Piesseful Bees Honey
- 2 heaped tsp Dijon mustard
- 4 tbsp extra virgin olive oil
- 2 tbsp apple cider vinegar
- 2 large cloves fresh garlic, minced
- salt and pepper
Ingredients for Chicken Salad
- 150g brown rice, raw
- 150g cabbage, shredded
- 100g sweet corn kernels
- 80g cucumber, sliced
- 80g tomatoes, sliced
- 80g capsicum, sliced
- 50g beetroot, shredded
- 50g carrot, julienned
- 40g red onion, sliced
- 1 small avocado, sliced
- 2 tbsp extra virgin olive oil
- 250g skinless chicken breast, diced
- 1 flat tsp onion powder
- 1 flat tsp smoked paprika powder
- salt and pepper
- 1 heaped tsp white sesame seeds
Method
Whisk all the ingredients for the honey mustard dressing together until smooth, chill in the fridge. Boil or steam the rice, drain and set aside. Construct the bowls with all the salad ingredients and the rice. Heat a medium frying pan with olive oil and when sizzling add the chicken. Sauté the chicken until partly browned then add the onion powder, smoked paprika powder, salt and pepper. Stir until the powders have evenly coated the chicken and continue to sauté until the chicken is cooked. Add the chicken to the bowls and drizzle with honey mustard dressing. Sprinkle with sesame seeds.
