How should I store my honey?

Room temperature in the pantry is all it needs. Keep the lid on and a dry spoon in the jar, and it will look after itself. We’d skip the fridge, since the cold just speeds up crystallising.

My honey has gone hard and grainy. Has it gone off?

Not at all. That’s crystallising, and it’s a sign the honey is raw and unprocessed rather than anything being wrong. Sit the jar in a bowl of warm water for a little while and it will come good. Some people prefer it that way and eat it straight from the jar.

What does raw and unfiltered actually mean?

It means we haven’t heated it or stripped it through fine filters, so the natural pollen and enzymes stay where they belong. It’s honey as it came out of the hive, which is why the colour and flavour shift a little from season to season.
