A dinner everyone actually eats, baths without negotiations, and everyone into bed feeling settled… and maybe a quiet house afterwards with no business chaos waiting for me.

This honey and soy chicken kebabs recipe is one of those meals I can almost make without measuring anymore. It uses ingredients we always have in the fridge and pantry, and it comes together in minutes.

Ingredients

Method

  1. In a large bowl mix together honey with kecap manis, light soy, sesame oil, vinegar, ginger, garlic, chilli flakes and half the coriander.
  2. Add the chicken and all the chopped vegetables into the bowl and coat in marinade.
  3. Cover and put in the fridge to marinate for 3–4 hours.
  4. Slide ingredients onto the skewers alternating between chicken and vegetables.
  5. Turn the barbecue hotplate on high and heat the olive oil.
  6. Fry the skewers until the chicken is fully cooked through and lightly charred.
  7. Garnish with the rest of the coriander and sesame seeds.

As the honey and soy chicken kebabs cook, the honey caramelises and creates that beautiful sticky glaze. It’s savoury, slightly sweet and exactly the kind of flavour that feels reassuring after a long day.
