With the school holidays wrapped up, I’ve been reflecting on the little traditions that make these breaks so special. For me, it’s always about the simple joys—spending time with my kids in the kitchen, creating delicious treats, and making memories that last far longer than the holidays themselves. This Apple Berry Crumble is one of my absolute favourites, straight from my honey cookbook.

  • Want a crunchier topping? Add a little more sugar, and you’ll get that gorgeous golden caramelisation and an extra crisp texture.
  • Prefer a softer, more crumbly topping? Use more flour to create a pale, delicate crumble that melts in your mouth.

Let’s talk about the apples—arguably the star of the show!

For this crumble, I love using Granny Smith apples. Their tartness perfectly balances the sweetness of the honey and richness of the buttery topping. But don’t feel limited—use your favourite baking apples, especially if you’ve got seasonal varieties on hand. They can add a unique flavour to the crumble that makes it even more special.

As for cutting the apples, it all comes down to personal preference. Thinner slices, like the ones I used here (a mandoline works wonders), will bake into soft, melt-in-your-mouth pieces. On the other hand, thicker slices will retain some crunch, which adds a bit of texture. It really depends on what you enjoy.

Which Type of Honey is Best for Cooking?

If you’ve been lucky enough to sample our range of Western Australian honeys, you’ll know that every single one of our honeys has its own flavour profile. So it’s no wonder that we often get asked which honey is best to cook with.

Realistically, you can cook with any of our honeys, but obviously when you’re adding honey to a recipe with other ingredients, you might find that the honey flavour is masked or muted by stronger flavours. We therefore suggest that you don’t cook with honey that has subtle flavours – instead, we recommend using a bush honey or a wildflower honey that is produced with nectars of a range of plants and generally has a more fuller flavour profile (and is less expensive, which helps if you’re needing to use honey in a large quantity!)

Which Type of Honey is Best for Cooking

To make individual apple berry crumbles, preheat the oven to 180 degrees Celsius. Mix together honey, lemon juice and vanilla in a large bowl, then add apples and berries and toss until they’re evenly coated. Let the mixture infuse for 15 minutes to allow the flavours to meld. Meanwhile, in another large bowl, combine flour and butter by using your fingers to pinch the butter into the flour until it resembles large breadcrumbs. Add oats, white sugar and brown sugar to the bowl and mix until combined. Add 2-3 tablespoons of cold water to the mixture to dampen it slightly and create some clumps by pinching it together. Divide the fruit mixture among 6 ramekins, each approximately 10cm x 5cm in size, filling them evenly. Top each one with an even layer of the crumble mixture. Place the ramekins on a baking tray to catch any drips. Bake for 30 minutes or until the fruit is saucy and bubbling and the crumble is golden. Serve warm with whipped cream.
